Instructions

  1. Preheat your oven to 425°F (218°C). Season the rack of lamb generously with salt and pepper.
  2. In a small bowl, mix the breadcrumbs with the finely chopped herbs. Add a dash of olive oil to help them bind together.
  3. Heat a skillet over medium-high heat and add the olive oil. Once hot, sear the rack of lamb for about 2 minutes on each side until browned.
  4. Remove the lamb from the skillet and press the herb mixture onto the fatty side of the rack firmly until it sticks.
  5. Place the lamb on a baking sheet, herb-side up, and roast in the oven for 15–20 minutes, or until the internal temperature reaches your desired doneness (let’s aim for medium-rare at 130°F/54°C).
  6. Let it rest for 10 minutes before slicing into chops. Enjoy!
