Instructions
- Preheat your oven to 425°F (218°C). Season the rack of lamb generously with salt and pepper.
- In a small bowl, mix the breadcrumbs with the finely chopped herbs. Add a dash of olive oil to help them bind together.
- Heat a skillet over medium-high heat and add the olive oil. Once hot, sear the rack of lamb for about 2 minutes on each side until browned.
- Remove the lamb from the skillet and press the herb mixture onto the fatty side of the rack firmly until it sticks.
- Place the lamb on a baking sheet, herb-side up, and roast in the oven for 15–20 minutes, or until the internal temperature reaches your desired doneness (let’s aim for medium-rare at 130°F/54°C).
