Instructions

  1. In a large pot, heat olive oil over medium heat. Add the cubed butternut squash and cook, stirring occasionally, until it begins to soften.

  4. Return the soup to the pot, stir in the coconut milk, and season with salt and pepper to taste. Heat through and serve warm.
