  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  3. Add the mushrooms and sauté until golden and soft, about 5 minutes.
  4. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  5. Stir in the cream cheese and Parmesan until combined. Season with salt and pepper to taste.
  6. Lay the chicken breasts flat, and slice a pocket into each piece without cutting all the way through.
  7. Stuff each chicken breast with the mushroom and spinach mixture.
  8. Secure with toothpicks, if necessary, and season the outside of the chicken with salt and pepper.
  9. Place chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
  10. Garnish with fresh parsley before serving.
