Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add the mushrooms and sauté until golden and soft, about 5 minutes.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
- Stir in the cream cheese and Parmesan until combined. Season with salt and pepper to taste.
- Lay the chicken breasts flat, and slice a pocket into each piece without cutting all the way through.
- Stuff each chicken breast with the mushroom and spinach mixture.
- Secure with toothpicks, if necessary, and season the outside of the chicken with salt and pepper.
- Place chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
