Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides.

  3. Return the beef to the pot. Add in the beef broth and water, scraping the bottom of the pot to release any caramelized bits.
  4. Add in the salt, pepper, bay leaves, and thyme. Stir well and bring everything to a gentle simmer.
  5. Cover the pot and lower the heat. Let it simmer for about 1.5 hours, or until the beef is tender.
  6. Add the carrots and potatoes to the pot and continue to simmer for another 30 minutes, or until vegetables are tender.
  7. Remove bay leaves before serving. Enjoy your homemade beef stew!
