Instructions
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, stirring frequently until the onion becomes translucent.
- Add the Arborio rice to the pan and cook, stirring, for about 1-2 minutes until the rice turns slightly translucent around the edges.
- Lower the heat and begin adding the vegetable broth, one cup at a time, stirring continuously. Allow the rice to absorb most of the liquid before adding more.
- Once all the broth has been added, stir in the peas and cook until they are bright green and tender, about 2-3 minutes.
- Remove the saucepan from heat. Stir in the Parmesan cheese, fresh mint, lemon zest, salt, and pepper.
- Serve the risotto hot, garnished with additional mint if desired.
