Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach leaves
- 1/2 cup feta cheese, crumbled
- 2 garlic cloves, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Juice of 1 lemon
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine spinach, feta cheese, garlic, salt, and pepper.
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each breast with the spinach and feta mixture and secure with toothpicks.
- Heat olive oil in an ovenproof skillet over medium heat.
- Place the chicken breasts in the skillet, season with oregano, and cook for 3-4 minutes until golden brown on one side.
- Flip the chicken, pour lemon juice over, and transfer the skillet to the oven.
- Bake for 10-12 minutes until the chicken is cooked through and juices run clear.
- Let rest for a few minutes before serving, removing the toothpicks.
