Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach leaves
  • 1/2 cup feta cheese, crumbled
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine spinach, feta cheese, garlic, salt, and pepper.
  3. Cut a pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each breast with the spinach and feta mixture and secure with toothpicks.
  5. Heat olive oil in an ovenproof skillet over medium heat.
  6. Place the chicken breasts in the skillet, season with oregano, and cook for 3-4 minutes until golden brown on one side.
  7. Flip the chicken, pour lemon juice over, and transfer the skillet to the oven.
  8. Bake for 10-12 minutes until the chicken is cooked through and juices run clear.
  9. Let rest for a few minutes before serving, removing the toothpicks.
