Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Scrub the potatoes clean, pierce several times with a fork, and bake in the preheated oven for about 1 hour or until tender.
  3. Remove the potatoes from the oven and let them cool slightly. Then, peel and dice into cubes.
  4. In a large mixing bowl, combine the diced potatoes, sour cream, half of the cheese, half of the bacon, and half of the green onions. Season with salt and pepper.
  5. Melt the butter and grease a baking dish with it. Spread the potato mixture evenly in the dish.
  6. Sprinkle the remaining cheese and bacon on top.
  7. Bake the casserole in the oven for another 20 minutes or until the cheese is bubbly and golden brown.
  8. Remove from the oven, garnish with the remaining green onions, and serve warm.
