Instructions
- Preheat your oven to 375°F (190°C).
- Scrub the potatoes clean, pierce several times with a fork, and bake in the preheated oven for about 1 hour or until tender.
- Remove the potatoes from the oven and let them cool slightly. Then, peel and dice into cubes.
- In a large mixing bowl, combine the diced potatoes, sour cream, half of the cheese, half of the bacon, and half of the green onions. Season with salt and pepper.
- Melt the butter and grease a baking dish with it. Spread the potato mixture evenly in the dish.
- Sprinkle the remaining cheese and bacon on top.
- Bake the casserole in the oven for another 20 minutes or until the cheese is bubbly and golden brown.
- Remove from the oven, garnish with the remaining green onions, and serve warm.
