Ingredients

  • 8 oz spaghetti
  • 1 cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 cup fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: 1/4 cup toasted pine nuts

Instructions

  1. Cook the spaghetti according to the package instructions in a large pot of boiling salted water. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until the garlic is fragrant, about 1-2 minutes.
  3. Stir in the chopped sun-dried tomatoes and cook for another 2 minutes, allowing the flavors to meld.
  4. Add the cooked spaghetti to the skillet, tossing to coat the noodles in the aromatic garlic and oil mixture.
  5. Stir in the fresh basil and Parmesan cheese until well combined, then season with salt and pepper to taste.
  6. If using, sprinkle in the toasted pine nuts. Serve immediately and enjoy!
