Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes

  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and continue to sauté for 1-2 minutes, until fragrant.
  3. Stir in crushed tomatoes, vegetable broth, and sugar. Allow the mixture to come to a simmer.
  4. Reduce heat to low and let simmer for 20 minutes. This will help the flavors meld beautifully.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender, then return to pot.
  6. Stir in heavy cream and fresh basil, cooking for an additional 5 minutes. Season with salt and pepper to taste.
  7. Ladle soup into bowls. If desired, top with grated Parmesan cheese and serve with warm, crusty bread.
