  1. In a small saucepan, mix the heavy cream, whole milk, and granulated sugar. Scrape the seeds from the vanilla bean into the mixture and add the pod as well. Heat over medium-low until the sugar is fully dissolved, whisking often.
  2. Remove the mixture from the heat. Sprinkle the gelatin over the surface and let it sit for about 5 minutes to soften. Then, gently whisk until the gelatin is completely dissolved.
  3. Strain the mixture into a bowl or large measuring cup, discarding the vanilla pod. Divide evenly into four serving glasses or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours or until set.
  4. For the raspberry drizzle, combine raspberries, powdered sugar, and lemon juice in a blender. Blend until smooth. Strain through a fine-mesh sieve to remove the seeds.
  5. When ready to serve, remove the panna cotta from the fridge. Gently spoon the raspberry drizzle over each serving and enjoy!
