Instructions
- Preheat your oven to 450°F (232°C). Line a baking sheet with foil for easy cleanup.
- Pat the rack of lamb dry with paper towels. Generously season with salt and pepper on all sides.
- Heat the olive oil in a skillet over medium-high heat. Sear the lamb for about 2 minutes on each side until browned.
- Remove the lamb from the skillet and let it rest for 5 minutes. Sprinkle the chopped rosemary and thyme evenly over the lamb, pressing it into the meat gently.
- Place the lamb on the prepared baking sheet, bone side down, and roast in the preheated oven for 15-20 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Allow the lamb to rest for 10 minutes before slicing. Serve with your favorite sides and enjoy!
