Melting Slow-Cooked Moroccan Lamb Tagine

Ingredients
- 2 lbs of lamb shoulder, cut into cubes
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 1 tbsp ground cumin

- 2 cups chicken or vegetable broth
- 1 can (14 oz) diced tomatoes

- 1/2 cup dried apricots, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, for garnish
- Cooked couscous, quinoa, or rice for serving
Instructions
- In a large skillet, heat olive oil over medium heat. Add the lamb cubes and brown on all sides. Work in batches if necessary to avoid overcrowding the pan. Transfer the browned lamb to your slow cooker.
- In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent and fragrant. Add the cumin, coriander, smoked paprika, and cinnamon, and cook for another minute.
- Transfer the onion and spice mixture to the slow cooker. Add the chicken or vegetable broth, canned tomatoes, chickpeas, and dried apricots. Season with salt and pepper, then give everything a good stir.
- Cover and cook on low for 8-9 hours, or on high for 4-5 hours, until the lamb is tender and flavors have melded beautifully.
- Before serving, taste and adjust seasonings. Garnish with freshly chopped parsley and serve with couscous, quinoa, or rice.
